Two Great Ways to Turn Venison Into Holiday-Ready Sausage

Tips for Vacuum Sealing

If you intend to vacuum seal your venison meat, place the meat onto a cookie sheet covered with wax paper. Then, place it in the freezer for 20 minutes. Remove and vacuum seal. Partially freezing prevents the bags from smashing and keeps juices from squeezing out into the vacuum sealer.
